Kale, Tomato, Potato, Carrot, Onion and Chorizo soup.
1 tablespoon olive oil 1 tablespoon finely chopped garlic 1/2 cup diced onions 1/2 cup diced carrots 1 bunch kale, washed and chopped 6 ounces chopped chourizo (or any sausage) 3 bay leaves 6 cups chicken stock 6 ounces diced tomatoes 10 ounces diced potatoes
In a large pot, heat the oil over medium-high heat. Add the garlic, onions, and carrots and cook for 5 minutes. Add the chourizo and let cook for 2 minutes. Add the kale and bay leaves and mix well. Add the chicken stock, tomatoes, and potatoes. Bring the soup to a boil, and then reduce the heat to low and simmer for 30 to 40 minutes.
Remove the bay leaves and serve hot.
You don't need any added seasonings in this soup. Chorizo is very spicy so if you want a milder flavor use another type of sausage. Enjoy!
